So this morning I got inspired and decided to have a crack at Vegan Scrambled Eggs.
I used the recipe from this site called The Spruce as a guide.
The only thing I didn’t use was the nutritional yeast, as I haven’t been able to find any yet.
Wow were we pleasantly surprised. The texture was great and it tasted pretty good. Even the child scoffed it down.
For all you Aussies out there make sure you use this tofu, as the softer or silken variety are not firm enough.
Here is the final result for Brunch.
Vegan Scrambled Eggs with Vegan Bacon Strips and Asian Marinated Tufu cubes.
Bit of HP sauce on the “facon” as we like to call it and yes HP sauce is ok as it containsno dairy or animal products in it.
Carolyn is making a Mushroom Fettuccine for dinner.
Will let you know how that turns out later. Unfortunately she had a disaster with the blender, but I wasn’t allowed to take a picture so just use your imagination 🙂
Off to Aldi to get replacement ingredients.
