QUORN MEATBALLS IN TOMATO SAUCE WITH PASTA

This is very tasty easily prepared dish that you can make ahead and then just re-heat when ready.

Serves 4

 

Ingredients:

pkt frozen Quorn meatballs

1 onion diced

1 red capsicum diced

1 small stick celery diced (optional)

1 zucchini diced

3 cloves garlic chopped finely

1 red chilli chopped finely (optional)

6 large mushrooms chopped into small pieces

2 tins diced tomatoes

sea salt and black pepper

fresh or dried herbs such as rosemary, oregano, basil, mint and parsley

olive oil

 

Fry meatballs and mushrooms in a little olive oil until golden brown, remove from pan and set aside.

Add a little extra olive oil to frypan and fry onion, garlic, zucchini, celery, capsicum and chilli, turn down the heat and put lid on, let cook for 5 minutes.  Add herbs, tins of tomatoes, salt and pepper, bring to boil then let simmer for 10 minutes.

Serve with spaghetti or you’re favourite pasta and garlic bread.  Sprinkle on a little parsley and parmesan cheese when serving.
